Nose : Pretty powerful. It declines on ripe fruits (apples, pears) cooked in butter – lightly salted – with a bit of lemon zest. It is as much maritime (the opening helps, on fish and seaweeds). A both maritime, pastry and syrupy nose, efficient and with a beautiful density.
With water, the pastry character takes the upper hand, with hazelnut and praline notes on top.
Mouth : Strong in alcohol (even after the dilution), the malt is well here and linked to pastry fruits (pear pie). Spices makes the whole a bit more bitter – nutmeg, chili. The water doesn’t change the profile much.
Finish : Strong comeback of the smoked malt, powdered with milk chocolate and almond paste. A parsimonious supply of nougat is here to cement the sweet couple. The finish is rather short.
